The Bywater cocktail was created by Chris Hannah of New Orleans in 2007 while working at Arnaud’s, a famous NOLA restaurant. This picks up on the trend of cocktails named after neighborhoods, and Chris was inspired by the Caribbean-themed neighborhood of Bywater. It’s a relative to the Brooklyn Cocktail, so a second cousin to the Manhattan. Using aged rum, you get a huge depth of flavor. I used a 12-year-old Demerara and it was fantastic.
1 3/4 oz aged rum
3/4 oz Averno Amaro
1/2 oz Green Chartreuse
1/4 oz Falenum
2 dashes Peychaud’s bitters
2 dashes Orange bitters
Combine all ingredients in mixing glass and stir until well-chilled. Strain into a coupe with a Luxardo cherrry, and express an orange peel over the cocktail.
